Homemade Pierogies
Ingredients
- All-purpose flour
- Salt
- Egg
- Sour cream
- Potatoes
- Cheddar cheese
- 2 cups
- 1/2 tsp
- 1 large
- 1/2 cup
- 4 small/medium - mashed
- 1 cup shredded
Serves: about 3 1/2 dozen small pierogies
Instructions
Simple, easy to make pierogies. Enjoy a potatoe and cheesy filled dough ball of goodness.
Made from scratch and can be fried with onion for a brighter flavor.
Step-by-step
For the dough:
- Mix the flour, salt, and egg (clumpy)
- Work in the sour cream and butter
- Knead until the dough becomes less sticky
For the filling:
- Cook and mash 4 small or medium sized potatoes
- Mix potatoes with the shredded cheese
To make pierogies:
- Roll the dough out until it is about 1/8” thick
- Cut the dough into roughly 2” circles
- Place about 1-1 1/2 teaspoons of filling onto the dough
- Fold the dough in half to form a pocket of dough
- Pinch the edges to seal, or use the tines of a fork
Freeze for up to 4 weeks or immediately boil and sautee with onion!
