Homemade Pierogies

Ingredients

  • All-purpose flour
  • Salt
  • Egg
  • Sour cream
  • Potatoes
  • Cheddar cheese
  • 2 cups
  • 1/2 tsp
  • 1 large
  • 1/2 cup
  • 4 small/medium - mashed
  • 1 cup shredded

Serves: about 3 1/2 dozen small pierogies

Instructions

Simple, easy to make pierogies. Enjoy a potatoe and cheesy filled dough ball of goodness.
Made from scratch and can be fried with onion for a brighter flavor.


Step-by-step

For the dough:

  • Mix the flour, salt, and egg (clumpy)
  • Work in the sour cream and butter
  • Knead until the dough becomes less sticky

For the filling:

  • Cook and mash 4 small or medium sized potatoes
  • Mix potatoes with the shredded cheese

To make pierogies:

  • Roll the dough out until it is about 1/8” thick
  • Cut the dough into roughly 2” circles
  • Place about 1-1 1/2 teaspoons of filling onto the dough
  • Fold the dough in half to form a pocket of dough
  • Pinch the edges to seal, or use the tines of a fork


Freeze for up to 4 weeks or immediately boil and sautee with onion!
