Ingredients

  • Potatoes
  • Onion
  • Lettuce
  • Velvita cheese
  • Original Rotel
  • Chips of choice
  • Taco seasoning (or spices)
  • 2 medium sized
  • 1 small/ medium
  • About 1/3 cup
  • 16 oz block
  • 10 oz can
  • A handful, crushed
  • About 1/2 a packet

Instructions

Enjoy a blend of seasoned potato cubes with chips, queso, onion, and other vegetables to mix in. Create a build-your-own taco salad bar! Perfect for families, friends, and more.


Create a simple queso, toss potatoes in some spices, and enjoy!


Step-by-step

For the potatoes:

  • Cube 2 medium potatoes
  • Toss in oil and your favorite spices (I like garlic powder, salt, pepper, oregano, red pepper flakes)
    • Or use a taco seasoning!
  • Cook potatoes in an air frier or oven at about 375-400 for roughly 25 minutes

For the queso:

  • Cube a 16oz stick of velvita
  • Drain a 10oz can of Rotel
  • Combine the velvita and rotel in a bowl and microwave on high for 6 minutes, stirring half way

  • Sautee a diced onion until translucent
  • Crush some of your favorite chips or crackers


Combine the potatoes, onion, lettuce, queso, chips, and any other vegetables you might want!
