Potato Taco Salad
Ingredients
- Potatoes
- Onion
- Lettuce
- Velvita cheese
- Original Rotel
- Chips of choice
- Taco seasoning (or spices)
- 2 medium sized
- 1 small/ medium
- About 1/3 cup
- 16 oz block
- 10 oz can
- A handful, crushed
- About 1/2 a packet

Instructions
Enjoy a blend of seasoned potato cubes with chips, queso, onion, and other vegetables to mix in. Create a build-your-own taco salad bar! Perfect for families, friends, and more.
Create a simple queso, toss potatoes in some spices, and enjoy!
Step-by-step
For the potatoes:
- Cube 2 medium potatoes
- Toss in oil and your favorite spices (I like garlic powder, salt, pepper, oregano, red pepper flakes)
- Or use a taco seasoning!
- Cook potatoes in an air frier or oven at about 375-400 for roughly 25 minutes
For the queso:
- Cube a 16oz stick of velvita
- Drain a 10oz can of Rotel
- Combine the velvita and rotel in a bowl and microwave on high for 6 minutes, stirring half way
- Sautee a diced onion until translucent
- Crush some of your favorite chips or crackers
Combine the potatoes, onion, lettuce, queso, chips, and any other vegetables you might want!
